Ricotta doughnuts

Ingredients:

  • 210g self raising flour
  • 2 teaspoons baking powder
  • 50g sugar
  • 250g ricotta cheese
  • 3 eggs
  • rind of a lemon finely grated
  • drop of vanilla essence
  • vegetable oil for frying (about 250ml if shallow frying)
  • 2 tablespoons caster sugar for coating
  • Method

    Place all the ingredients in a large mixing bowl and beat well to form a smooth batter. An electric hand whisk works perfectly well.

    Heat about 2/3cms vegetable oil in a heavy based frying pan, testing a little drop of the batter to see if it sizzles.

    Drop teaspoons of the batter into the hot oil and fry until golden brown and crisp, gently turning in the oil to cook on all sides.

    Drain on kitchen paper and then toss in caster sugar before serving.
